Ingredients
4 egg whites
½ cup vanilla sugar
½ cup sugar
½ tsp cream of tartar
1 pinch salt
1 tsp vanilla
2 cup heavy cream
¼ cup powdered sugar
1 tbsp vanilla
200 gram strawberries
100 gram blueberries
2 kiwi
1 ½ tsp corn starch
Directions
Step 1
Firstly clean your stand mixer or electric mixer with vinegar or lemon juice to make sure there is no residual fat as it will effect the meringue forming stiff peaks then add 4 egg whites a pinch of salt and 1/2 tsp cream of tartar and start mixing on low

Step 2
Once the egg whites become frothy and white add the sugars 1 tsp at a time to fully incorporate them . ( Try to use a superfine sugar like caster sugar)

Add vanilla and beat 2 minutes then add the cornstarch and beat to stiff peaks

On parchment paper use a plate to make an 8 inch circle then flip over use some of the meringue and use it like a glue in the four corners of the baking tray to stick the paper onto
Step 5
Preheat oven to 300 f then use a spatula to put the meringue in the circle and make a round shape then use the spatula or a spoon and make flips from bottom to top to make the meringue look pretty .
Step 6
Put the meringue in the oven then immediately reduce the temperature to 250 f and bake for 1 hour to 1 hour 15 minutes. once done let cool down two hours in the oven
Step 7
Add cold whipping cream powder sugar and vanilla to a bowl and beat until stuff and fluffy then place in the centre of the meringue then arrange all of the fruit on top and enjoy
