Ingredients

300 gram soba noodle

1 tbsp soy sauce

3 tbsp peanut butter

2 cloves garlic

1 tsp ginger

1 tbsp orange juice

1 tsp lemon juice

2 tbsp lime juice

1 tbsp sriracha

1 tsp sesame oil

1 tbsp olive oil

1 red pepper

½ cucumber

3 scallions

¼ cup peanuts

handful cilantro

1 tbsp honey

Directions

Step 1

Cook soba noodles according to pack instructions then rinse in cold water and put in ice water to completely cool

300 gram soba noodle

Step 2

In a bowl mix light soy peanut butter garlic ginger honey sriracha sesame oil orange juice lemon juice lime juice and olive oil then set aside

1 tbsp soy sauce

3 tbsp peanut butter

2 cloves garlic

1 tsp ginger

1 tbsp orange juice

1 tsp lemon juice

2 tbsp lime juice

1 tbsp sriracha

1 tsp sesame oil

1 tbsp olive oil

1 tbsp honey

Step 3

Drain the noodles completely then add to a large bowl then place sliced vegetables toasted peanuts and cilantro on top then cover in the sauce and toss . Note if the noodles were not drained correctly you may need to adjust the seasoning
