Step 1
On a cutting board slice your chicken breast into three pieces from the front to the back then cover with parchment paper and use a mallet to beat the chicken until itβs thinner and flatter

Season the chicken front and back with salt and pepper then beat two eggs in a bowl season then with salt and pepper and get two plates and fill one with flour and one with breadcrumbs

Dip the chicken into the flour coating completely then coat in the eggs tap off excess and push into the breadcrumbs making sure the whole piece is covered in crumbs . Fry in vegetable oil on medium heat or 375 for about 3-4 minutes per side or until golden
