Ingredients

1 chicken breast

250 g farfalle

12 cherry tomatoes

½ cup black olives

500 g mozzarella di bufala

½ red onion

½ cup fresh parsley

½ cup red wine vinegar

¾ cup olive oil

pinch salt

pinch black pepper

1 cloves garlic

2 tsp oregano

½ cup pecorino

pinch Pinch sugar

2 tsp Dijon mustard

¼ tsp red pepper flakes

3 tbsp capers

Step 1

Season the chicken breast how you like then cook in the oven roughly 30 minutes . You can buy pre bought cooked chicken also to save time

Step 2

Season water with salt then cook the farfalle pasta according to the package then drain and rinse under cold water to stop the cooking process and drizzle a little olive oil

250 g farfalle

Step 3

In a jug add red wine vinegar olive oil salt pepper crushed garlic Dijon mustard red pepper flakes oregano a pinch of sugar and grated pecorino cheese then use the stick blender and blend it until creamy

Step 4

In a large bowl add the pasta cherry tomatoes capers torn Buffalo mozzarella sliced black olives diced red onion and diced cooked chicken breast toss in the dressing then add parsley and adjust the seasoning as needed
