Ingredients
4 chicken drumsticks
4 chicken thigh bone-in
20 clove garlic
1 pinch black pepper
1 tbsp black peppercorn
3 tbsp palm sugar
⅓ cup dark soy sauce
½ cup soy sauce
½ cup water
4 bay leaves
300 mL rice vinegar
Directions
Step 1
Put the chicken thighs and drumsticks in a large bowl then add the garlic peeled and bashed .

Step 2
Add pepper peppercorns palm sugar dark soy light soy rice vinegar water and bay leaves and massage the chicken .Cover and marinade in the fridge for at least 2 hours.

Step 3
In a pan on medium high heat brown all the chicken then add in all the marinading juices . Bring to a boil then reduce heat to low cover with a lid and simmer for 30 minutes .
Step 4
After 30 minutes turn all the chicken coat in the juices then cover for another 25 minutes turning in between . Serve with your favourite rice and garnishes
