Ingredients

850 gram baby spinach

3 clove garlic

1 tbsp butter

1 tbsp olive oil

3 tbsp heavy cream

250 gram ricotta cheese

250 gram mascarpone

1 eggs

100 gram buffalo mozzarella cheese

100 gram buffalo mozzarella cheese

200 gram parmesan cheese

12 lasagne sheets

¼ cup fresh parsley

¼ cup dill

¾ tsp salt

¾ tsp black pepper

½ tsp nutmeg

Directions

Step 1

Wash Spinach and leave to drain in a colander

850 gram baby spinach

Step 2

If using hard pasta sheets cook for 7 minutes in lightly oiled boiling salted water to soften then remove and put on baking paper so they dont stick

Step 3

Add olive oil butter and 3 cloves chopped garlic to a pan and sautee then add the spinach with 3 tbsp cream and let it wilt down

In a bowl mix ricotta mascarpone egg dill parsley mozzarella salt pepper and nutmeg then add the creamy spinach and mix to combine

100 gram buffalo mozzarella cheese

¼ cup fresh parsley

Step 5

Pre heat oven to 190 c fan and oil a baking dish then layer a thin layer of sauce on the bottom and top with some lasagne sheets followed by the creamy spinach and grated parmesan .

200 gram parmesan cheese

Step 6

Repeat with the rest of the lasagne sheets then add some torn mozzarella and parmesan on the top layer . Bake in the oven for 30 minutes

100 gram buffalo mozzarella cheese

200 gram parmesan cheese
