Ingredients
6 eggs
7 potato
1 pinch salt
1 pinch black pepper
2 onion
200 gram cheddar cheese
100 gram bacon
300 mL olive oil
Directions
Step 1
In a pan put in the olive oil and heat on medium high heat

Step 2
Thinly slice 2 onions and fry in the oil until golden

Beat 6 eggs in a large bowl then season with salt and pepper

Step 4
Drain the onions then put them into the bowl with the beaten egg
Step 5
Peel 7 medium size potatoes then quarter them and slice them and fry 6 minutes until just starting to color then remove them from the pan and add them to the eggs

Let the bowl of eggs potatoes and onion rest 20 minutes and drain most of the oil from the frying pan leaving only a little bit for frying . I like to put the oil through a sieve and i reserve the oil for the next time im cooking

Put the pan on medium high and add half of the potatoes then top with rthe bacon and cheese and add the rest of the potatoes covering the cheese and bacon

Fry on medium high for 2 minutes then reduce heat to medium low and fry 7 minutes then flip and fry the other side the same way until everything is cooked and golden brown
