Ingredients

1 large onion

12 medium waxy potatoes

3 pieces bacon

Step 1
Thinly slice onions then add 300 ml olive oil to a pan and cook the onions on medium heat until they start to turn golden. Remove the onions then put in a large bowl

Wash then quarter the potatoes and slice thinly then add to the oil and cook about 10 minutes turning occasionally . Meanwhile whisk 7 eggs into the onions and add salt and pepper then drain out the potatoes and place in the egg mixture and let rest 20 minutes and now you can use a sieve and drain the oil from the pan to reuse later

Fry three pieces of bacon then slice into small pieces and slice the cheese into pieces . Put the pan back on the heat and add less than a half of the potatoes then top in the centre with cheese bacon more cheese and the rest of the potatoes . Cover with a lid and cook about 8 minutes then flip and cook another 6-7 minutes . Serve up and enjoy
