Spanish food is definitely one of the best in the world . I have tweaked this delicious potato and egg Spanish tortilla and filled it with bacon and cheese and it is just so delicious 

Cheese and Bacon stuffed Tortilla De Patatas 

Thinly slice onions then add 300 ml olive oil to a pan and cook the onions on medium heat until they start to turn golden. Remove the onions then put in a large bowl 

Wash then quarter the potatoes and slice thinly then add to the oil and cook about 10 minutes turning occasionally . Meanwhile whisk 7 eggs into the onions and add salt and pepper then drain out the potatoes and place in the egg mixture and let rest 20 minutes and now  you can use a sieve and drain the oil from the pan to reuse later 

Fry three pieces of bacon then slice into small pieces and slice the cheese into pieces . Put the pan back on the heat and add less than a half of the potatoes then top in the centre with cheese bacon more cheese and the rest of the potatoes . Cover with a lid and cook about 8 minutes then flip and cook another 6-7 minutes . Serve up and enjoy
