Ingredients
1 cauliflower
3 potato
3 tbsp vegetable oil
4 whole cardamom
1 cinnamon sticks
1 bay leaves
1 yellow onion
2 shallots
3 clove garlic
1 tbsp ginger
1 tbsp tomato paste
2 tomato
¾ tsp tumeric
1 tsp coriander
½ tsp chili powder
⅓ tsp black pepper
1 tbsp cumin seeds
½ tsp garam masala
1 tsp salt
1 tsp salt
1 tsp fenugreek leaves
½ cup cilantro
Directions
Step 1
Cut 1 head of cauliflower into bite size pieces and peel and dice 3 potatoes

Step 2
Put 1 tsp of salt into a pot of boiling water then add the potatoes and cauliflower and cook for 8 minutes They should not be fully cooked but nearly cooked .

Take out the potatoes and cauliflower and reserve the cooking water for later
Step 4
Put oil in a pan on medium heat then add the cinnamon stick bayleaf bashed cardamom pods and cumin seeds and fry for a minute or two

Dice the onion and shallots and fry until translucent

Grate the garlic and ginger and add to the pan frying another 2 minutes

add tomato paste and grate 2 large tomatoes and add those also

Add in the tumeric coriander black pepper chili powder garam masala salt and fenugreek leaves and stir in well

Add 1 1/2 cups of the cooking water back in then add the potatoes and cauliflower then cover with a lid and cook 8 minutes approx
Step 10
Garnish with lots of cilantro
