Ingredients

1 kg new potatoes (red variety is best)

2 tbsp extra virgin olive oil

4 cloves garlic, sliced

bunch of wild fennel or fennel tops, chopped

2 green onions, sliced

½ Juice of half a lemon

Salt and pepper to taste
Directions
Step 1
Wash the potatoes and cook them in salted boiling water until fork-tender

Drain the potatoes and season with salt, pepper, and olive oil

Transfer the potatoes to a tray lined with baking paper. Flatten each potato by gently pressing it with a glass cup or something hard and flat

Bake the potatoes in an oven preheated to 190°C (375°F) for 30-35 minutes, until golden and crispy
Step 5
In a large pan, heat some olive oil and fry the sliced garlic, green onion, and chopped fennel for a minute or so until fragrant
Step 6
Add the crispy potatoes to the pan and toss them gently to coat with the garlic and fennel mixture
Step 7
Finish with a squeeze of fresh lemon juice and adjust the seasoning with more salt if needed
