Batatas Murro

A traditional Portuguese dish that translates to "punched potatoes." These crispy, smashed potatoes are flavored with garlic, fennel, and a touch of lemon, making them a perfect side dish for any meal.

Ingredients

1 kg new potatoes (red variety is best)
2 tbsp extra virgin olive oil
4 cloves garlic, sliced
bunch of wild fennel or fennel tops, chopped
2 green onions, sliced
1/2 Juice of half a lemon
Salt and pepper to taste

Directions

1.
Wash the potatoes and cook them in salted boiling water until fork-tender
2.
Drain the potatoes and season with salt, pepper, and olive oil
3.
Transfer the potatoes to a tray lined with baking paper. Flatten each potato by gently pressing it with a glass cup or something hard and flat
4.
Bake the potatoes in an oven preheated to 190°C (375°F) for 30-35 minutes, until golden and crispy
5.
In a large pan, heat some olive oil and fry the sliced garlic, green onion, and chopped fennel for a minute or so until fragrant
6.
Add the crispy potatoes to the pan and toss them gently to coat with the garlic and fennel mixture
7.
Finish with a squeeze of fresh lemon juice and adjust the seasoning with more salt if needed
8.
Serve hot and enjoy these flavorful and crispy potatoes!
