Vegan Blueberry Pancakes

Ingredients

1 cup unbleached Bread Flour

1 tbs coconut sugar

1 ½ tsp baking powder

¼ tsp salt

1 cup almond milk

1 tsp vanilla extract

1 tbs coconut oil plus more for cooking pancakes.

1 flax egg (1 tbs flax meal plus 3 tbs spring water)

1 - 2 handfuls of Blueberries

Directions

Step 1

To a small mixing bowl add flour, coconut sugar, baking powder, salt and mix thoroughly.

¼ tsp salt

Step 2

To a separate mixing bowl add almond milk, flax egg, coconut oil and mix thoroughly. Stir in Blueberries and let batter rest for 5 minutes.

1 cup almond milk

1 tsp vanilla extract

1 tbs coconut oil plus more for cooking pancakes.

1 flax egg (1 tbs flax meal plus 3 tbs spring water)

1 - 2 handfuls of Blueberries

Step 3

Pour dry mix into wet mix and mix until just combined. Please make sure not to overmix.

Step 4

Add 2 tsp of coconut oil to a nonstick pan on medium heat. Add 1/3 cup of pancake batter to the pan. Cook for 2 mins one side and for 1 min on the other side.

Step 5

Top with extra Blueberries, Drizzle with maple syrup and enjoy!
