Ingredients

Mama Sitas Achuete Annatto Powder

1 pack 16oz of Rice Noodles

1 lb Pork Belly

1 cup Shredded Chicken

4 cloves Garlic

½ a Medium Onion

Green Onion (chives) to Garnish

1 cup of Carrots

¼ Head of Cabbage

3 tbsp Olive Oil

2 tbsp Soy Sauce

1 tbsp Dark Soy Sauce

2 tbsp Oyster Sauce

Salt/Pepper to Taste

Directions

Step 1

Once water is boiling throw in the rice noodles for a few minutes until the noodles are al dente. Strain noodles and rinse with cold water.

Step 2

Cut the pork belly into thin 1 or 1/2 inch pieces. That way they fry up nice and crunchy.

1 lb Pork Belly

Step 3

Julianne an onion by cutting it in half from end to end. Then trim off the top and bottom. Peel of the skin and lay the flat side down. Cut towards the middle.

½ a Medium Onion

Step 4

Cut a peeled carrot in half and make small slices. Lay them flat and cut out small uniform match sticks.

1 cup of Carrots

Step 5

Do a rough chop for the garlic and put aside.

Step 6

Chop up the cabbage and chives.

Green Onion (chives) to Garnish

Step 7

Heat up some oil and cook the pork belly for about 3-5 minutes or until golden brown. Take out from the oil.

3 tbsp Olive Oil

Fry the chicken for a few seconds in the same oil the pork belly was cooked in. Just for a few seconds. Take out from the oil.

1 cup Shredded Chicken

Step 9

Put the garlic into the same oil. Add onion and sautee for a minute. Add Annatto Powder, salt and pepper. Add carrots. Cook for another minute. Add cabbage. Cook for a minute.

Step 10

Add soy sauce, dark soy sauce, and oyster sauce. Add the cooked rice noodles. Mix in the cooked pork belly and chicken. Top with the green onions (chives).
