8 cup water
1 oz salt
½ tsp baking soda
6 whole russet potatoes

Directions
Step 1
Add salt and baking soda to water and bring to a boil.

Step 2
Peel potatoes and cut into ~2 inch chunks. Boil in water until super soft, then drain and let sit in the pot for a few mins so the water evaporates.

Step 3
Add potatoes to a bowl, lightly oil and add salt. Mix together thoroughly.

Place potatoes onto a baking sheet, bake at 450° for 20 mins.

Using a spatula or tongs, flip the potatoes over and cook for another 20 mins. Repeat process until they become super crispy.
Step 6
Sprinkle with dried parsley, and enjoy!
