Essentials

Don’t overthink cooking, it’s easier than you think. That’s one of the reasons I love cooking. It’s a whole vibe. So, relax, grab yourself a glass of wine or tequila this will be fun! Cooking is a staple to my family. It’s what brings us together on a Sunday. A lot of my recipes were inspired by my mom (La Chela) and my dad (El Rodo). They both love to cook from enchiladas, tacos, pozole, salsas, beans and much more. Some of the best memories I have with my mother are eating tacos de frijoles de la olla con jalapeño y queso cotija. Basically, a tortilla filled with beans, cheese, and left over salsa. We enjoyed these tacos after my mom would get home from a long day of working in the fields. Just now thinking back to those days, I could still smell the dirt off her clothes. My mom would fire up the pot of left-over beans on the stove while flipping tortillas directly on the flames. Such a simple taco full of the best memories in my life.
