2 zucchini
2 yellow potatoes (medium)
½ tbsp onion powder
1 tsp garlic powder
¼ tsp black pepper
½ tsp baking powder
2 tbsp flour
1 tbsp avocado oil
Spicy Lemon Aioli
7 tbsp mayonnaise
1 cloves garlic minced
1 tbsp chives
½ tsp cayenne pepper
Salt & pepper
¼ lemon (juice)
1 tsp mustard
½ tsp sugar

Step 1
Start by grating you zucchini.

Step 2
Add the shredded zucchini to a cheese cloth. Squeeze out as much of the liquid as possible.

Step 3
Peel your potatoes. Boil for 5 minutes and then run them through a food processor until you have a chunky texture.

Step 4
Mix the zucchini, chunky potatoes, onion powder, garlic powder, black pepper, baking powder, flour and oil together in a bowl.

Squeeze them thoroughly with your hands and then start forming little fritters balls.
Step 6
You can choose to air fry or bake these. I air fried until crispy and then enjoyed with spicy lemon aioli.

Finely chop the chives and combine with the ingredients below. Enjoy!
