Ingredients
1 box of spinach
½ yellow onion
3 cloves garlic
1 tbsp avocado oil
4 tbsp cup water (or stock)
½ lemon juice
button mushrooms
½ cube bouillon
tsp 1/2-1 red pepper flakes
Salt & pepper
½ cup half and half
½ cup pasta water
½ cup smoked white cheddar
2 tbsp mayo

Directions
Step 1
Salt a pot of water, bring to a boil and cook your pasta al dente. Reserve some pasta water for later.

Step 2
Blend the ingredients below together into a puree.

Add the puree to a pan, once it beings to bubble, add in the mushroom and seasoning mix below.

Add in half and half, cheese, pasta water and mayo, continue simmering for a few more mins.
