Ingredients

3 lb chicken breast

2 tbsp Plain yogurt

½ Juice of lemon

2 tsp garlic mince

1 tsp ginger mine

1 tsp red chili powder

½ tsp turmeric

½ tsp ground coriander

Salt & pepper

Butter Chicken Sauce

1 medium red onion

6 tomatoes

2 tsp garlic mince

1 tsp ginger mince

4 tbsp raw unsalted cashews

2 tsp tomato paste

Shan butter chicken spice mix

1 tsp honey

2 cup water

1 tsp red chili powder

1 tsp turmeric

1 tsp garam masala

½ tsp ground coriander

½ cup coconut milk

Salt & pepper

Directions

Chicken

Step 1

Marinate chicken breast with the ingredients below for up to 4 hours.

2 tsp garlic mince

1 tsp ginger mine

1 tsp red chili powder

½ tsp turmeric

½ tsp ground coriander

Step 2

Cook room temp. marinated chicken in a high heat pan. Only cook chicken 50% of the way through (about 4-5 mins) then transfer to a plate. The chicken will cook fully once added and simmered in the butter chicken sauce.

Step 3

Now begin preparing your butter chicken sauce.

Butter Chicken Sauce

Step 1

In the same pan as the chicken, add oil, red onion, tomato, garlic, ginger, cashews, tomato paste, butter chicken spice mix and cook for 2-3 mins on med high heat.

Step 2

Add 1-2 cups of water (add more water for more gravy and less water for less gravy) + add more spices (red chilli, turmeric, garam masala, ground coriander)

Step 3

Bring to a boil, simmer half uncovered on med low heat for 15 -20 mins.

Step 4

Let the mixture cool completely before blending. Pour the blended mixture back into the pot through a fine mesh strainer for an ultra smooth sauce.

Step 5

add the par-cooked chicken back to the gravy, bring to a boil and simmer on medium heat for 10 minutes.

Step 6

add 1/2 cup of coconut milk or 1/2 stick of butter, salt & pepper to taste.

Garnish with more coconut milk & fresh cilantro.
