Ingredients
1 lb chicken thigh boneless
½ can chipotle peppers in adobo sauce
½ yellow onion
3 cloves garlic
½ tsp oregano
¼ tsp paprika
¼ tsp cumin
¼ tsp garlic powder
2 tsp brown sugar
Salt and pepper
1 lime, juiced
long grain enriched rice
cilantro
oaxaca cheese
pinto beans (canned)
romaine lettuce
avocado
spicy mayonnaise

Directions
Step 1
Blend together the ingredients below.
½ can chipotle peppers in adobo sauce

Add your chipotle puree to the chicken thighs along with the seasoning mix below. Mix it all together and let marinate for a few hours.

Step 3
Sear the chicken in a high heat pan on both sides until it's cooked all the way through. Then transfer to a cutting board, letting it rest before slicing.
Step 4
Create your burrito bowl by serving with a bed of cilantro lime rice, cheese, pinto beans, avocado, lettuce and spicy mayo.
