Ingredients

Chicken Kebabs

1 ½ lb minced chicken thigh

1 yellow onion

1 tsp coriander seeds

1 jalapeño

5 cloves garlic

1 tbsp cilantro

½ tsp red chilli

½ tsp cumin

¼ tsp turmeric

salt & pepper

½ tsp tomato paste

2 tbsp melted butter

Yogurt Sauce

2 mini cucumbers

½ stalk green onions

Handful of fresh cilantro

1 jalapeño

2 cloves garlic

½ tsp salt

1 cup yogurt

Chopped Salad

2 tomatoes

½ white onion

2 tbsp chopped cilantro

½ lemon juice

Directions

Chicken Kebabs

Step 1

Grate your yellow onion and squeeze out as much of the liquid as you can.

Grind up coriander seeds, garlic cloves and jalapeño in a mortar and pestle.

Combine together with the onion along with the ingredients below. Mix together well.

Step 4

Add in the minced chicken and work it all together with clean hands until well combined.

Take two bamboo skewers, clump your chicken into a ball and use a hand to form a kebab around the wood. This is sort of an intuitive process, but as you do a couple of them you'll start to get the hang of it.

Place the kebabs on a baking tray and bake for 40 mins at 400F, flipping every 15-20 mins.

Brush with butter and remove from the bamboo stick. I served this with cinnamon infused basmati rice, yogurt sauce and chopped salad.

Step 1

Run the ingredients below through a food processor.

Step 2

Add to 1 cup of plain yogurt, mix thoroughly together and serve.

Step 1

Dice the ingredients below.

2 tbsp chopped cilantro

Step 2

Combine together with lemon juice and salt.
