This is what I served with the pollo pibil in my last video. Also traditionally served with cochinita pibil and many other dishes. Spicy but so good!

Yucatán style red pickled onions

Slice thin the onion and habaneros, put them in a bowl or glass jar, add the salt and lime juice.

vinegar (optional to store in the pantry)

the vinegar is not necessary if you plan on eating them quickly, but vinegar helps to pickle quickly, preserves at room temperature as long as the jar is well sealed. But with the citric juice can stay in the fridge. Add it in a jar. Seal it and store in the fridge or the pantry 😊
