This is the meal that will remind me of my childhood and the one i almost cook like my mom. Sopita was a typical food or side dish in my home, but with taquitos, dorados were our favorite.

Taquitos Dorados & Sopa Aguada

In a blender, add all the veggies and 2 cups of the water, and blend them well.

Add the oil to a pot on medium heat and fry the fideo until golden brown; add the blender mix and the rest of the water. Here, it will depend on how soupy or dry you want; remember, the fideo grows two times the size. Add the tomato and chicken bouillon and salt to taste. Bring it to a boil and cook until fideo gets tender; add more water and seasoning if needed.

For the salsa boil the tomatillo, jalapeños, onion, and garlic for 10 minutes, add them in a blender with the avocado and cilantro, season with salt and blend very well. 

In a pan on medium heat with the oil, add the meat and break it out until it changes color, add the onion thin sliced and minced garlic, season with salt and black pepper and add the cumin.

Push the meat to one side of the pan and let the grease go to the other side, dip the tortillas in it and fry them on a griddle until slightly crispy but fold them before they get too crispy.  

Build the tacos and add salsa, cream, lettuce and tomato. Serve with lime wedges.
