Al pastor is a Mexican marinade for pork meat but has been tried in other meats like chicken and cooked fish. I also thought ceviche would work with this seasoning, and it came out so good! Ceviche works best with white fish; this will be up to you to use the most affordable or your favorite. Also, as with any other marinade, the longer you let it marinate, the better.

Fish Ceviche Al Pastor 

Cut in small dice your favorite white fish, squish the extra water, and tap dry with paper towels.

put it in a bowl with the lime juice, mix it, and ensure the fish is submerged in the lime juice; cover with plastic wrap and rest in the fridge for at least 3 hours. Overnight is way better.

of Culantro and Achiote seasoning, Goya (you can use annatto powder instead)

Take the fish out of the fridge and add all the seasoning and garlic, cover and let it rest in the refrigerator. until you are done with the next step.

of small diced fresh pineapple (about 1/3 of pineapple)

red bell pepper (seedless and small diced)

Cut the onion into small dice, take the seeds and stem off the pepper, chop the cilantro, and cut into small dice the pineapple. Add everything to the bowl and mix well. 

cover with plastic wrap and let it rest in the fridge for at least an hour to bring all the flavors together. 

Corn tortilla chips or tostadas to serve.
