This was my first viral easy recipe; it's been a favorite of everyone who has made it. So easy and convenient for a quick delicious dinner, and you can make it as spicy as you want. 

Enchipotladas

Add the listed ingredients to the blender and ensure the peppers blend well. It might get thick, but stop mixing and scrape with a spatula.

Shred the chicken, ensure no small bones, and mix it in a bowl with chopped onion and cheese.

Slightly fry the tortillas in a non-stick pan on medium to low heat with some cooking oil. Tortillas should be soft to roll them up easily.

Add some chicken mix to a tortilla and roll it up; place them in an oil-sprayed oven-safe dish.

Add the sauce on top; because it will be thick, spread it over all the rolled tortillas and top it with the rest of the cheese.

cover with a piece of foil and bake it at 375 for 25 minutes
