this is the version of the Dipping Tacos from Taco Bell. Way better homemade! you could shortcut all the spices for taco seasoning, and use your favorite cheese. 

Dipping Tacos

For the meat, add all the ingredients in a pot and cover with water, put the lid on, and cook for about 60 minutes on medium heat or until the meat is tender and easy to shred with a fork. Shred it and set it aside to mix with about one cup of the red sauce when done.

For the red sauce, add the peppers with no seeds or stems to a pot with the garlic and cover with water; put the lid on and cook for 20 minutes on medium heat; let them cool down and add them in a blender with the rest of the ingredients and some of the water where the peppers cooked and blend.

Strain it through a fine strainer with the help of a spoon and some water where the peppers are cooked to get rid of the skin and seeds.

For the cheese sauce, add the cheese and milk in a pot on low heat and stir once in a while until the cheese melts; mix the melted butter and flour and add to the pot while stirring to thicken the sauce and avoid burning on the bottom.

On a griddle on medium heat, warm up the tortillas and add a slice of cheese on both sides, then meat on top, and when the cheese on the bottom side gets crispy, fold the tortilla and serve them with the two sauces.
