From where I'm from, this barbacoa is mostly for breakfast and is cooked underground overnight. A slow cooker works great, but it might take 8-10 hours to be so tender. The pressure cooker takes only one hour, and you get super tender meat. This meat is very fatty, so they say it is great for hungover.

Add the beef cheek to a pressure cooker with all the ingredients and cook for one hour.

when done, remove the big chunks of fat or leave them if desired. chop it off very well

serve in flour or corn tortillas with chopped onion and cilantro, lime wedges and salsa
