Ingredients

400 g Gnocchi

2 tbsp chopped parsley

4 cloves garlic

pinch lemon zest

½ lemon

1 tbsp lemon juice

3 tbsp butter

300 g chicken fillets

1/3C semi dry white wine

1/4C pasta water

1 tbsp olive oil

salt and pepper

Step 1
Finely chop parsley and garlic. Slice up half a lemon, remove seeds and quarter them. Set them aside.

Prepare the chicken strips in a large bowl and season it with salt, pepper, lemon zest, parsley, garlic and olive oil.

In a large pan, melt some butter and add in the chopped garlic to sweat it out. Add in the lemon slices and cook until golden followed by the chicken strips and fully cook throughout while tossing and turning. Once cooked, take the chicken out in a separate bowl.

Deglaze the pan with white wine and reduce it to 50% on low heat and add in the lemon juice.

Cook the gnocchi in a separate pot, drain and add it into the pasta pan along with pasta water. Add the cooked chicken back into the pan. To finish, season with salt and pepper and add more butter and chopped parsley. Toss everything to combine.
