Top 3 of the Week
3. Roasted Cabbage. I made a Roasted Cabbage this week, but won't be saring the recipe, due to some changes I need to make. However, for the first time, it was actually very good. The caramelization of the cabbage really does something amazing, and I will definitely be trying it again, with some minor changes. 2. My Mom's egg rolls. No they are not traditional, but they are bangin'. I might make some egg rolls this week. 1. Roast potatoes. Make sure your potatoes are very dry before roasting. The best way to do this is to simmer them until very tender, then let them dry awhile before roasting. Also roast them in beef tallow for a richer flavor. I air fried mine this week, but I think they do better in the oven. Anyway, Roasted Potatoes with a little Rosemary are crazy.
What I Learned (Weekly)
A quick tip on roasting Brussels Sprouts.. As I have a recipe for brussels sprouts coming up, I thought I'd share my favorite, recently learned tips. Actually two. First of all, add the oil to the baking sheet you are using, and PREHEAT IT for about ten minutes in the oven. This will make sure the oil does not just seep into the Brussels, keeping them from getting all oily on the inside. Next, mae sure to keep them cut-side up. This will get you the best crisp. Hope that helps!
About Me
I'm just a regular guy. I teach 1st Grade during the day, and make food for my wife and I in the evening. I fall in love with the process over and over again, and I'm just trying to share it with you all. Thank you for being here!
