Ingredients

For the Brownie

75 g 60% dark chocolate

50 g unsalted butter

1 egg

50 g white sugar

50 g all purpose flour

15 g cocoa powder, sifted

For the Matcha Basque Cheesecake

380 g cream cheese

100 g white sugar

A pinch of salt

½ tsp vanilla extract

2 eggs

1 egg yolk

15 g all purpose flour

200 g heavy cream

12 - 15 g matcha powder

For the Brownie
Step 1
Melt together butter and dark chocolate until smooth.
Step 2
Whisk together egg and sugar, then add chocolate mixture.
Step 3
Sift together flour and cocoa powder, then add to the chocolate mixture, fold until combine.
Step 4
Pour into baking tray aligned with parchment paper, set aside.
Step 5
For the Matcha Basque Cheesecake
Step 1
Blend all basque cheesecake ingredients together until smooth. Pour on top of the brownie batter.
Step 2
Bake at 220c for 25-30 minutes, until the top is browned.
Step 3
Let it cool down before refrigerate overnight, it tastes better after being rested :)
Step 4
Let it warm up at room temp for 30 minutes to 1 hour. Slice it with hot knife and enjoy the yum :) ✨
