1 ground Italian Sausage
1 onion, diced
3 carrots, diced
1 shallot, sliced
½ lb mushrooms, sliced
2 tsp salt
2 tsp pepper
1 tbsp oregano
1 tsp thyme
2 tsp garlic powder
Red Pepper Flakes (to taste)
¾ cup red wine
28 oz canned diced tomatoes
5 cups chicken broth
10 oz tortellini
1 cup parmesan, plus more for topping
1 cup heavy cream

Step 1
In a pot, add the ground sausage. Break up the meat and cook over medium heat until cooked through. Remove the meat from the pot

Add onion, carrot, shallots, and mushrooms to the pot. Cook over medium heat until the onions are translucent, about 10 minutes

Add in the spices. Stir to combine.

Deglaze with red wine. When the alcohol evaporates add the tomatoes and broth. Stir to combine

Add the tortellini and parmesan. Return the sausage to the pot. When the pasta is fully cooked, stir in the heavy cream.
