Ingredients
1 onion, diced
1 shallot, diced
2 tsp olive oil
6 cloves garlic
28 canned crushed tomatoes
2 tsp salt
2 tsp oregano
red pepper flakes
4 cups vegetable broth
1 cup orzo
½ Juice of lemon
2 tbsp fresh dill
feta (for topping)
Directions
Step 1
Add oil, onion and shallot to a pot. Cook over medium-high heat until the onions reach a dark caramelization (15-20 minutes)

Add the garlic cloves, cook for 2-3 more minutes

Add in crushed tomatoes and the spices. Stir to combine

Add in the vegetable broth. Bring to a boil
4 cups vegetable broth
Step 5
Reduce the pot to a simmer. Add the orzo and continue to simmer until the pasta is cooked

Add the juice of 1/2 a lemon and the dill. Top the soup with feta cheese
