Ingredients

1 lb ground beef

1 sweet onion, diced

3 bell peppers, diced

6 garlic cloves, minced

2 tsp salt

2 tsp pepper

2 tsp basil

2 tsp oregano

2 tsp paprika

Red pepper flakes, to taste

1 cup red wine

15 oz diced tomatoes

28 oz crushed tomatoes

4 cups beef stock

1 cup rice

2 cup shredded cheese

½ cup parsley

Directions

Step 1

In a pot with oil, add the ground beef. Cook over medium-high heat until the meat is fully cooked and the edges are crisp. Remove the meat from the pot

Step 2

Add the onions and peppers. Cook over medium heat until the onions are translucent.

Step 3

Add the garlic and spice mix. Stir and simmer for 3 minutes.

Step 4

Deglaze the pot with red wine.

Step 5

When the wine evaporates, add in the tomatoes, beef stock and rice. Bring to a boil and then cover and simmer until the rice is fully cooked.

4 cups beef stock

1 cup rice

Step 6

Add the beef back to the pot, add 1 cup of cheese and all the parsley. Stir to combine

½ cup parsley

Step 7

Ladle to soup into over safe bowl. Sprinkle cheese on top of each bowl. Place the bowl under the broiler until melty.
