Ingredients

1 tbsp olive oil

3 carrots

1 onion

3 sticks celery

6 cloves garlic

6 cups chicken broth

2 tsp salt

2 tsp pepper

2 tsp dried basil

2 tsp oregano

2 tsp rosemary

2 tbsp tomato paste

15 can great northern beans

½ cup shredded chicken

1 ball box matzo mix

Directions

Step 1

In a pot, add olive oil, carrots, onion, and celery. Cook over medium heat until the onions are translucent (about 10 minutes)

Step 2

Add in the garlic cloves, cook for two minutes. Pour in the chicken broth

Step 3

Bring to a simmer, add the spices and tomato paste. Stir to combine

2 tsp oregano

2 tsp rosemary

2 tbsp tomato paste

Step 4

Add in the beans. Simmer for 10 minutes.

Step 5

Add about 1/4 of the soup into a blender. Blend the soup, add it back to the pot.

Step 6

Add 1/2 cup shredded chicken. Add in matzo ball (cooked to box instruction). Simmer until the matzo balls are fully cooked
