Ingredients
2 shallots, roasted
4 slices of thick bread
4 tbsp butter, softened & divided
1 tbsp chives, chopped
1 c shredded mozzarella
½ c shredded gouda
2 tbsp crispy fried shallots
1 tbsp ranch seasoning mix
2 tbsp chives, minced
2 tbsp dill, minced
4 oz cream cheese
½ tbsp avocado oil

Directions
Step 1
If you haven’t roasted your shallots, start by preheating the oven to 375°F. Cut ¼-inch from the top of the heads of the shallots. Drizzle ½ tablespoon of avocado oil onto the top of each. Season with a bit of salt & pepper. Wrap in foil, place on a baking sheet & roast in the oven for 55 minutes. Once finished baking, allow to cool.

Spread 1/2 tablespoon of butter on one side of each slice of bread. Set aside.

To a bowl, add cream cheese, mozzarella, gouda, ranch seasoning mix, chives, dill, crispy fried shallots, as well as salt & pepper, to taste. Squeeze in shallots. Mix & mash until well combined. Spread on the non-buttered side of two slices of bread.

Step 4
Slather paste onto 2 slices of bread. Top with the other slice of bread, buttered side up. Melt 1 tablespoon of butter in a pan over medium-low heat. Add sandwich & cook until golden brown ~4 minutes, flipping once. Repeat with the other sandwich. Serve hot.
