½ tsp salt
½ c monterey jack, shredded
4 slices of thick bread
1 head of garlic, roasted
4 tbsp butter, softened
1 tbsp chives, chopped
2 slices of mozzarella
2 slices of gouda
2 slices of cheddar
½ c sour cream

Directions
Step 1
Spread 1/2 tablespoon of butter on one side of each slice of bread. Set aside.

Step 2
In a bowl, mix the monterey jack, sour cream, salt, garlic & chives together. Spread on the non-buttered side of two slices of bread .

Step 3
Stack cheeses on top of each slice of bread — 1 slice of each: gouda, mozzarella & cheddar. Top with bread, buttered side up. Melt 1 tablespoon of butter in pan over medium-low heat. Add sandwich & cook until golden brown ~4 minutes, flipping once. Repeat with the other sandwich. Serve hot.
