Pho 🍜 but make it wings, it’s the mash-up you didn’t know you needed! It'll be your new go-to recipe for entertaining inspired by the national dish of Vietnam. You may ask, how is it 'pho?' It is done so via two methods: a spice-fill dry rub incorporating quintessential pho ingredients including freshly toasted star anise, cloves, black peppercorn & cinnamon. Once the wings are air fried to perfection, they're tossed in a simple 'pho-reminiscent' concoction of citrus, fish sauce & beef broth. Those two things make these wings pho-nomenal.

Ingredients

2 lb chicken wings

1 whole cinnamon stick

¼ tsp whole black peppercorn

1 whole star anise

3 whole clove

¼ tsp coriander

1 tbsp brown sugar

½ tbsp ginger powder

5 ½ tbsp garlic powder

1 tbsp onion powder

4 tsp baking powder

5 ½ tsp avocado oil

2 splashes of fish sauce

¼ c beef bone broth

½ tbsp lime juice

2 tbsp butter

crispy fried garlic

thai basil, finely minced

Directions

Step 1

Start by toasting cinnamon, star anise, clove, coriander & peppercorns in a dry skillet over medium heat. Stir frequently; once fragrant & lightly toasted (2-3 minutes) remove from the heat.

Step 2

Grind spices in a mortar & pestle. Pour into a bowl. Add brown sugar, ginger, baking powder, garlic & onion powder. Mix well.

Step 3

In a separate bowl, drizzle avocado oil over wings. Toss. Sprinkle spice mix over wings. Toss. Place wings in the air fryer at 400°F for 15-20 minutes, flipping halfway through.

Step 4

While chicken is frying, melt butter in a pan over low heat. Add in fish sauce, bone broth & lime juice. Mix. Pour 1/4 to 1/2 of sauce over the wings. Toss. Add fried garlic, Thai basil & remainder of sauce, if desired. Toss again. Serve hot with hoisin for dipping.
