Garlic Herb Chicken Over Rice

To a medium bowl add the listed ingredients and mix until well combined.

Heat a large pot or pan to medium high heat. Add butter and olive oil. Sear chicken for 3-5 minutes on both sides until charred. Lower heat and cover to cook thoroughly.

Set aside all of the cooked chicken and once cooled, cube into chunks.

To the same pot add butter and oil. Then add the peppers, celery, onion and sauté for 2 minutes. Then add garlic.

Add in rice, chicken stock and season to taste. Stir then bring rice to a rapid simmer. Then cover and reduce to low heat.

Cook the rice for roughly 15 minutes or still al dente as the residual heat will continue to cook it.

Top the rice with the cooked chicken and pour the butter sauce on top.

Top with additional parsley serve and enjoy!

Combine all ingredients into a small sauce pan. Bring to a low simmer. Stir and set aside.
