Ingredients
2 eggs
1 medium potato
1 small chicken breast (leftover)
2 slices sourdough bread
½ cup cheddar cheese
3 - 4 tbsp butter
1 tbsp chosenfoods Mayo
½ tbsp strawberry jelly
½ tbsp hot sauce
Directions
Step 1
Pour yourself a delicious cup of coffee!
Step 2
Shred the cheese and potatoes. Squeeze any extra liquid from the potato shreds using a paper towel.
Step 3
Heat a pan over medium heat with 1 tbsp butter. Place the potatoes into the pan and cook until golden brown. Flip and cook until golden brown. Top with cheese. Place one slice of bread on top, buttered side up. Flip and cook until toast is golden brown. Remove from pan and set aside.
Step 4
Add 1 tbsp butter to the pan. Crack two eggs and add the diced chicken. Stir into a neat pile and cook. Once cooked, top with cheese and add the remaining slice of bread on top. Flip and top with the other half of the sandwich. Cook until the bottom slice is golden brown.
Step 5
Mix mayo, jelly, and hot sauce together in a small bowl.
Step 6
Slice the sandwich and enjoy!
