Stuffed Pepper Nachos

Perfect for busy summer nights or any sort of large gathering! Loaded with veggies and fully customizable to your liking. Throw it in a crockpot like in the video, or cook the meat, then your veggies and bring it all together in the end.

Ingredients

2 lbs ground beef

2 tbsp tomato paste

1 can fire roasted diced tomatoes

3 bell peppers of choice, diced

1 large yellow onion

1 tbsp Worcestershire sauce

salt and pepper to taste

Directions

Step 1

You can skip this step, however, I prefer to brown the ground beef first. And no, as always, I don’t drain that delicious fat…😒

Step 2

Add tomato paste and diced tomatoes to your slow cooker. Stir.

Step 3

Add your ground beef. Stir.

Step 4

Add your peppers, onions, salt, pepper, and Worcestershire sauce. Stir

Step 5

Cover and turn heat to desired setting. I usually go with 6 hours, but go with whatever setting best suits your needs.

Step 6

Lay some tortilla chips in a plate. Top with your stuff pepper mixture. Top with any additional desired toppings—guacamole, sour cream, jalapeños, queso, fresh diced tomatoes, etc
