Ingredients
Chicken
1 pound chicken breasts
1 ½ cups olive oil for frying
Buttermilk Brine
1 ½ cups milk
2 tsp salt
1 tsp onion powder
1 tsp garlic powder
1 tsp paprika
Flour Crust
2 cups unbleached all purpose flour
2 tbsp corn starch
1 tsp baking powder
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp black pepper
Waffle Batter
2 bananas, mashed
2 tbsp brown sugar
2 tsp baking soda
2 ½ cups unbleached all purpose flour
½ tsp salt
2 cups milk
Spicy Honey Butter
¼ cup maple syrup
2 tbsp butter
½ tsp salt
1 tbsp hot sauce of choice, optional
Directions
Chicken
Step 1
Mix buttermilk ingredients together in a large bowl.
Step 2
Pound chicken breasts thin, slice in half, and then place into buttermilk. Mix to combine. Place in fridge.
Step 3
Mix all your flour crust ingredients together. Set aside.
Step 4
Mix all your waffle ingredients together. Add milk to reach desired consistency.
Step 5
Begin making your waffles. I love my little @bydash waffle maker!
Step 6
Remove chicken from fridge. Remove chicken from buttermilk one at a time and coat with flour. Place onto a plate and repeat until done.
Step 7
Heat oil in a pan and begin frying chicken in batches. Place onto paper towel to cool.
Step 8
Lay down a waffle, top with chicken. Drizzle with maple sauce and top with remaining waffle. Enjoy!
