Ingredients
1 package rice noodles
1 ½ lbs chicken breast
4 cups broccoli, diced small
5 cloves garlic, diced
2 tbsp apple cider vinegar
1 tsp crushed red pepper
2 tbsp fish sauce
2 tbsp coconut sugar (brown sugar works too)
3 eggs, whisked
Directions
Step 1
Combine the vinegar, red pepper, fish sauce, and sugar and stir together.
Step 2
Slice your chicken breast into thin strips 2 inches long. Toss in the vinegar mixture, add in your garlic and mix, cover and place into fridge for while you prep remaining ingredients.
Step 3
Dice broccoli small and begin cooking noodles.
Step 4
Pour chicken mixture into a pan heated to medium high heat. Cook, stirring occasionally, for about ten minutes, until chicken is almost whitely cooked.
Step 5
Add in broccoli. Cook, stirring frequently, until broccoli just starts to soften, but still has a good snap to it. Pour in eggs and cook just until they’re cooked, stirring constantly. Remove from heat and serve over your rice noodles.
