Soup is amazing. Broccoli cheddar soup is even more amazing. And THIS recipe I whipped up is even more amazing’er! I love my soup to be more stew like than it is a broth, and this thick and creamy broccoli cheddar soup was out of this world and a family favorite.

BROCCOLI CHEDDAR SOUP (with a twist)

Melt butter in a large stock pot. Add your onions and cook until softened. Add in garlic and chicken bouillon and cook until fragrant.

Add in your flour and mix together until to a paste forms.

Pour in your broth, mix until well combined. Add in your veggies and mix together. Bring to a simmer and cover with a lid…cooking until softened.

Season with all purpose seasoning and stir. If desired, blend about half of your soup in a blender or with a stick/emulsion blender.

Add in your cheese and season with additional salt to your liking. Serve and enjoy!
