Ingredients

1 cup sweet potato puree, instructions below

⅓ cup melted butter

1 cup light brown sugar

¼ cup white granulated sugar

1 large egg

1 ½ tbsp vanilla extract

1 ¼ cups all purpose flour

½ tsp baking powder

¼ tsp baking soda

½ tsp salt

½ tbsp cinnamon

½ tsp nutmeg

1 cup powdered sugar

2 - 3 tbsp milk

1 tsp vanilla extract

¼ tsp cinnamon

Directions

Step 1

1. First start off by preparing your sweet potato puree. You can opt to use a can of puree if you want.

Step 2

2. Rinse/clean and peel 3 medium to large sized sweet potatoes.

Step 3

3. Cut into cubes, into four pieces.

Step 4

4. Place in a pan full of boiling water on medium heat. Let cook until potatoes are tender. (When a fork or knife goes through easily.)

5. Take your potatoes and strain them.

Step 6

6. Pour potatoes into a food processor or mixer.

Step 7

7. Add 1-2 tbsp of water. Blend until potatoes are smooth.

8. Add more water if too thick.

9. Set aside. You will need 1 cup of this puree. I poured my puree into a heat safe glass measuring cup. Cool for about 10 minutes.

10. Mix your flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.

11. Pour sweet potato puree into a bowl.

Step 12

12. Add your brown sugar, white sugar, butter, egg, and vanilla extract. Fully combine this ingredients.

13. Once combined, at your dry ingredients and whisk together. The batter will be a little loose but that is okay.

Step 14

14. Line a 9x9 square pan with parchment paper or spray with nonstick spray.

Step 15

15. Pour batter into pan and spread out evenly.

16. Place in oven on 350F for 25-30 minutes. Until a knife comes out with a little residue in the middle.

17. Let cool on a wire rack or dish for 20 minutes.

18. While that is cooling, add powdered sugar, milk, cinnamon, and vanilla to a bowl and make vanilla cinnamon glaze.

19. Pour glaze on top and let harden for another 20-25 minutes.
