Directions
Step 1
Cook your sushi rice, adding in a splash of rice vinegar and a dash of sugar to make it extra sticky.

Step 2
Tightly roll your resized cucumber + white rice on half a sheet of nori
cucumber (resized by trimming off quarters until desired shape)

Add your colored rice onto another halved sheet of nori and place the mini first roll onto it, and roll all together. The layers should be cucumber, white rice, nori, colored rice.

CAREFULLY slice the roll in quarters following the shape of the cucumber and set aside.
Step 5
Cut another sheet of nori in half and dab a little water to connect it into one long skinny sheet.

Step 6
Assemble your quartered rolls in the pattern that you want (I kept my cucumbers in the corners), then layer your fish and the rest of your quarters.

Tightly roll- if you followed my design, it should roll in a square.

Carefully slice off and discard ends, then slice, plate, and serve.
