One of the easiest Vietnamese stews to make- it has a similar profile to the classic American beef stew but sub potatoes for extra carrots and some extra umami spices ✨

Bò kho

beef (I used chuck but u can use any cut)

Cut and marinade meat with the marinade ingredients above for 30mins - overnight

Start on the broth: in a lightly oiled pot, add your aromatics (lemongrass oil and garlic) and gently cook until aromatic.

Add your ginger and sauté for 30 seconds then add your beef and lightly brown. Then mix in your tomato paste.

Add the rest of the broth ingredients and bring to a simmer and cook for about 1.5 hours on low. Add just enough water to submerge everything.

Add the carrots and let simmer until beef is super tender and carrots are cooked through. 10-30mins depending on your texture liking.
