Ingredients

8 jalapenos

shredded cheese

4 chicken thighs or 2 chicken breasts

1 tsp garlic powder

1 tsp onion salt

1 tsp cajun seasoning

1 tsp paprika

1 tsp salt

1 tsp pepper

1 tsp crushed red pepper

2 tbsp oil

For Garnish: Salsa, guac, pickled onions, limes

Directions

Step 1

Using your oven roast the jalapenos for 10 minutes at 400 degrees. Or 350 degrees for 10 minutes using the air fryer.

Step 2

Once the peppers are roasted, cut a slit down the center of the jalapeno, remove the seeds and place back on the baking sheet. Continue with all the peppers.

Step 3

Stuff the peppers with your favorite melting cheese, I used queso chihuahua, but mozzarella/pepper jack/colby jack also work. Place back into your oven or air fryer to melt the cheese.

Step 4

For the protein, dice up the chicken thighs or breast into bite size pieces. Add to a skillet with 2 tbsp oil on medium heat.

Add all of the seasonings to the chicken and sauté for 7-10 minutes.

Step 2

To assemble the tacos, heat up corn tortillas, place 1 stuffed Jalapeño into each tortilla, top the jalapeño with some of the chicken, then garnish with either salsa, guac, sour cream, pickled red onions, etc.
