Ingredients

Salsa Roja

5 red jalapeño

4 tomatoes

½ onion

4 cloves garlic

8 chiles de arbol

1 tbs olive oil

1 tsp salt

¼ cup water

Chilaquiles

chorizo

tortilla chips (homemade if possible)

1 cup salsa roja

refried beans (homemade if possible)

eggs

queso fresco

Directions

Salsa Roja

Step 1

In a dry pan, char the jalapeños, tomatoes & onions for about 7 minutes.

Step 2

Add in the garlic & chiles de arbol, sauté for another 2 minutes.

Step 3

Add in the oil, salt & cook for another 4-5 minutes.

1 tbs olive oil

Step 4

Add all contents to a blender container & add in the water. Blend until smooth.

Pour into a serving container & enjoy with chilaquiles, chips or any of your other favorite foods.

Chilaquiles

Step 1

Cook up chorizo until well done, about 6-8 minutes. Save some chorizo to add on top later.

Once cooked, add in the salsa & let come to a low simmer.

Make your tortilla chips if making homemade.

Cook eggs if using.

Step 5

To create chilaquiles, mix the tortilla chips in the salsa mixture right before plating.

Place refried beans on the bottom of the plate. Chilaquiles on top, then eggs, Queso fresco, Crema, chorizo, avocado & enjoy!
