Ingredients

1 cup Avocado Oil

4 garlic cloves, thinly sliced

1 jalapeño, chopped

4 green onions, thinly sliced

1 cup pistachios

¾ cup pumpkin seeds

¼ cup sesame seeds

2 tsp black pepper

1 tbsp salt

1 juice of lime, zested & juiced

1 tsp Mexican oregano

⅓ cup Cilantro

Directions

Step 1

Add the oil to a large skillet, set on medium heat, once hot, add the garlic, onions & jalapeño. Fry for 4-6 minutes making sure not to burn.

Step 2

Once toasty, drain out the veggies, to the same oil on medium heat, add the pistachios, pumpkin seeds and sesame seeds, toast while mixing, making sure not to burn them for about 5-7 minutes. Turn off the heat.

¾ cup pumpkin seeds

¼ cup sesame seeds

Step 3

With the heat off and the oil still hot, add in the pepper, salt & lime zest. Mix to combine.

1 tbsp salt

1 juice of lime, zested & juiced

Step 4

Stir back in the the fried onion, garlic & jalapeños.

Step 5

Add the oregano and lime juice. Mix to combine.

1 tsp Mexican oregano

1 juice of lime, zested & juiced

Step 6

Lastly mix in the chopped cilantro.

⅓ cup Cilantro

Step 7

Taste and adjust seasonings to taste.

Step 8

Serve with guacamole or top any dips/salads/egg dishes/etc.
