Ingredients

½ lb chorizo

1 tbsp oil, if needed

1 ½ lb Oaxaca Cheese

½ white onion, chopped

1 jalapeño, diced (seeds removed if you please)

3 garlic cloves, minced

2 tbsp hot sauce

Salt & Pepper to taste

Step 1
In a large oven safe skillet, add oil & chorizo, cook breaking up into pieces, 5-7 minutes.

Add the onion, jalapeño, garlic, cook for 5 more minutes. Add salt & pepper to taste. I only added pepper since the chorizo was pretty salty.

Add in 2, 3 or 4 tbsp of your favorite hot sauce, the more the better. Mix to combine.

Remove half of the chorizo & save for topping.

Shred the Oaxaca cheese in thin strands, by hand or with an actual cheese grater. Oaxaca cheese is like Mexican string cheese.

Lower skillet heat to medium low, add in all the cheese into an even layer.

Spoon over the reserved chorizo onto the top of the cheese.

With your oven set to broil, place the skillet in your oven under the broiler, cook until the cheese is melted, bubbly & starting to brown in spots.

Top with fresh chopped tomato & cilantro.
