Ingredients

2 lb Yukon gold potatoes

1 stick butter

1 block cream cheese

3 cloves crushed garlic

1 cup heavy cream

1 cup sour cream

Salt & Pepper to taste

1 cup crushed potato chips

Chopped parsley

Chopped chives

Directions

Step 1

Bring a pot of water to a boil.

Step 2

Peel the potatoes & chop into large chunks, add to boiling water, add plenty of salt. Boil for 8-12 minutes, or until just fork tender.

Step 3

Drain the potatoes, add them to a large empty pot on low heat.

Step 4

Add half a stick of butter, 1 block cream cheese, garlic & start mashing together.

Add the heavy cream, sour cream & salt & pepper to taste. Mix to combine.

Finish off by mixing in the remaining half stick of butter.

Pour into serving tray & enjoy!

OPTIONALLY, you can melt 2 tbsp butter in a pan, add 1 cup crushed kettle cooked potato chips, toast for 2-3 minutes. Stir in the chopped parsley & chives, top the mashed potatoes then serve!
