Ingredients

2 chicken breast, about 1/2 pound

2 tsp garlic powder, divided

2 tsp onion powder, divided

2 tsp smoked paprika, divided

2 tsp chipotle powder

3 tsp salt, divided

3 tsp black pepper, divided

¼ cup chipotle peppers in adobo sauce, mashed/blended

2 cup buttermilk

2 cup flour

1 cup corn starch

Oil for frying

1 can chipotle peppers in adobo, 7 oz

6 cloves garlic

¼ onion

2 tbsp soy sauce

5 tbsp butter, unsalted

1 cup honey

Dried Parsley for garnish, optional

Directions

Step 1

Cut the chicken in to smaller strips.

2 chicken breast, about 1/2 pound

Step 2

Add chicken tenders to large bowl, along with 1 tsp of each of the seasonings, the chipotle sauce, buttermilk & mix to combine. Marinate for at least 1 hour & up to overnight.

Step 3

In another large bowl, add the flour, corn starch & 1 teaspoon each of all the seasonings. Whisk to combine.

Step 4

To a large pot/pan, add the oil & set to a medium high heat while you start dredging the tenders.

Oil for frying

Step 5

To dredge the tenders, pass them through the flour mixture, then back through the buttermilk mixture, then back through the flour mixture.

Step 6

Fry the tenders for 3-5 minutes per side. Place them on a wire rack over a baking sheet while you fry all the tenders. Place them in a warm oven in 250 degrees while you make the sauce.

Step 7

To make the sauce, purée the can of chipotle peppers with 6 garlic cloves, 1/4 onion, soy sauce, 1 tsp each of salt & pepper.

Step 8

To a large skillet, add the butter, once melted, add in the honey, then the puréed chipotle pepper mixture. Mix to combine & let simmer for 5 minutes.

Step 9

To serve, dip the tenders into the sauce to coat on both sides.

Step 10

Sprinkle with parsley for garnish.

Step 11

Serve with ranch or blue cheese.
